How Does a Meat Thermometer Work?

Because undercooked meat and poultry can cause some problems when consumed, it is important to use a digital meat thermometer. Knowing how to can help you get the most accurate reading.

How does a digital thermometer work?

Unlike mercury-based thermometers or slice thermometers, they are digital completely different. When a piece of metal is heated, electricity passes differently. The hotter a piece of metal becomes, the harder it is that electricity will flow through it.

Electric meat thermometers work by lowering the current through its metal probe, which measures the ease of flow of electricity. Inside the thermometer, a microchip converts this resistor to temperature measurement, as you look at the digital surface of the thermometer.

Because of their accuracy, digital thermometers typically do not have to be inserted as deeply in the meat you are working with as other thermometers do.

Manual and digital temperature meters

The simple temperature meters for the stove are proven classics. At the end of her sensor stylus sits an analog display, which visualizes the measured value by a pointer on a scale. As a rule, these devices remain stuck in the food during the entire cooking process and are heat-resistant. They are already available from around ten euros. In contrast, digital devices are not allowed in the hot oven completely. Reason: The (plastic) housing together with the electrical system and display is not heat-resistant.

Often wired oven thermometers are equipped with a magnet, with which the device adheres to the oven housing.

In digital versions, a distinction is made between the rigid piercing variants, which indicate the temperature directly after grooving, but then have to be pulled out again, and flexible designs that stay permanently in the meat and check the temperature. They have a thin, heat-resistant cable connected to the mandrel, which is trapped in the seal of the oven door and leads to the display outside the cooking chamber. The control panel is often equipped with a magnet so that it will hold the stove. When making a purchase, make sure that the cable is not too thick, as is the case with some thermometers for the grill.

Not quite wireless despite radio reception

Another, the wireless version, has a decisive advantage: The display unit can be positioned variably. Thanks to the radio range (around 50 to 100 meters), the cook has the temperature in view, even if he is not in the kitchen. However: cable feedthrough is necessary here as well. The cable leads from the sensor in the meat to a transmitting part outside, which in turn continues the values to a third device (receiver with readout display). All digital variants usually have alarm functions that indicate a minimum or maximum temperature.

Transmission via Bluetooth

Several manufacturers already offer a Bluetooth connection to their smartphone for their digital devices. Associated apps are available for free. The mobile phone thus replaces the receiver and offers more options: the display can be used, for example, to display the temperature profile graphically or to compare it with past measurements.

Integrated with the oven

Some stove manufacturers such as Bosch and Neff have a deluxe version in their program: meat thermometers are part of the fixed equipment and communicate with the electronics of the oven. The color: In conjunction with the sensor, the heating power is regulated. The game remains guaranteed to be tender, but the price is tough.

Advantages of other types of meat thermometers

Digital meat thermometers, unlike others, can give you almost instant reading to know if your meat is done or not. Typical meat meters must remain within the meat throughout the cooking process, and others may take slow and sometimes inaccurate readings.
